About The Chef

Chef Derek Rylon, is a well-renowned chef who grew up on the Southside of Chicago. His culinary journey started when he was 13, in the dishroom of a now closed restaurant in Chicago's Hyde Park neighborhood. Young Rylon was thrown on the line to cook when the restaurant was short handed. The next thing Rylon knew, he flipping burgers and discovered a newly found passion that would never leave him.

Over ten years later, Rylon obtained a job as a dishwasher. When a line cook failed to come to work, Rylon was asked to cook on the line. Proving his talent and ambition, the General Manager noticed Rylon's unmatched talent and took the dishwasher under his wing. He enrolled the future chef in a formal culinary program, where Rylon honed his craft. After perfecting his skill, Rylon moved on to cook at Shaw's Crab House, Wild Fire, Maggianos Little Italy, Ruth's Chris Steak House, Gibsons, Capitol Grill, The Wyndham Hotel, The Westin, The Embassy Suites, Grill on the Alley and many more.

Although Rylon cooked at many hotels and restaurants and was amongst the most talented at each one, he simply wanted his own place at which he could truly create without limitations. He decided to partner with a childhood friend to open a breakfast place. With this idea, Batter & Berries was born with high reviews and great success in May of 2012. His delectable brunch creations were loved by many as lines formed out the door within weeks of opening. After four years of giving his all to a thriving Batter & Berries, Chef Rylon decided to branch out even further. As a chef with many specialties, breakfast and brunch were definitely not the only meals in his repertoire. In Fall of 2016, Chef Rylon's second restaurant opened, Rylon's Smokehouse, but he couldn’t stop there. His third restaurant and crowing achievement, Palette, located in Chicago's Gold Coast neighborhood. Fans of Rylon's creations can come and enjoy breakfast, brunch, lunch and dinner, receiving an all-around Rylon experience.

Derek's Supper Club

Rylon's Supper Club is offered every Friday through Sunday and is a culinary event that is not to be missed. Palette's executive chef, Derek Rylon, started cooking and creating dishes at the age of 13. He is an extremely seasoned chef and considers your plate to be his palette. Experience his artistry in an intimate setting at Palette. Chef Rylon will guide you through a prix fix 4-course dinner with sommalier beverage pairings. Make no mistake, this experience is all about taste and we guarantee that once you attend one, you'll want to attend them all.

The Black Kat Club

Hidden on the third floor of a former late 1800's brothel, the Black Kat club takes you back to the Prohibition era. Party like Gatsby in a restored speakeasy that offers a true Chicago experience with wonderfully hand crafted cocktails, delicious small plates and decadent desserts offered by famed Chicago Chef Derek Rylon. The experience all comes alive in the ambiance of our antique Victorian French Decor reminiscent of a turn of the century speakeasy.
